Pancakes & Eggs With a Twist

Oh, breakfast for dinner, how I love thee. I scrapped my original quesadilla idea, and went for something quicker, requiring little to no prep.

So, I whipped up a fluffy pancake, fried two eggs with olive oil spray, wilted baby spinach, and piled them all together. I then topped the delicious stack with a few globs of micha de cabra, the most delightful, creamy goat cheese ever, and a drizzle of real maple syrup. Amazing.

Tried it – delish.  And I realized my favorite thing is that it doesn’t require any ‘annoying’ ingredients, as I call them, like spices and sauces.
